After months of searching for the perfect chocolate chip recipe, I've finally found it! This recipe is super simple, no specialist equipment is needed and no need to chill dough. Rich in flavour, soft on the inside and chewy on the outside, the recipe gives you the ultimate chocolate chip cookie. Total Time: 30 minutes
Yield: 6 large cookies/9 medium cookies
Ingredients:
165g Plain Flour
1/2 tsp Baking Powder
3/4 tsp Salt
110g Unsalted Butter (melted and cooled)
100g Light Brown Sugar
75g Caster Sugar
2 tsp Vanilla Extract
1 Large Egg
150g Dark Chocolate Chips
150g Milk Chocolate Chips
Method:
1) Preheat the oven to 170c and line a large baking sheet with parchment paper
2) In a large mixing bowl, add the melted and cooled butter, brown sugar and caster sugar. Whisk vigorously for 1 - 2 minutes until it turns into a paste-like consistency.
3) Whisk in the egg and vanilla until the mixture is smooth
4) Pour in the flour, baking powder and salt. Using a spatula fold to combine, leave a few streaks of flour and pour in the chocolate chips (leave some to sprinkle on top after baking)
5) Continue to fold the dough until the chocolate chips are dispersed and the flour is completely blended in. Be careful not to over-mix.
6) Using a batter/ice cream scoop, scoop your batter onto the lined baking sheet and bake for 10 - 12 minutes.
7) The cookies are ready when they have a golden ring around the edge but are pale and puffed in the centre. The cookies will continue to bake outside of the oven and slowly flatten and settle as they cool.
8) Sprinkle the remaining chocolate chips over the baked cookies whilst they're still hot.
9) Let the cookies cool for around 20 minutes before eating.
